Dutch Oven Pizza

EQUIPMENT

  • Dutch Oven

INGREDIENTS

  • 2 tbsp olive oil

  • ½ cup pizza sauce

  • For the topping- ½ cup Pepperoni slices; 2 tbsp sliced olives ¼ cup sliced onion; ¼ cup sliced mushrooms (or add your favorite toppings)

  • 1 tsp garlic powder

  • Salt & pepper as per taste

  • ½ cup shredded cheddar cheese

  • ½ cup shredded mozzarella cheese

  • Italian oregano spice blend & chilli flakes for serving

  • For the Dough

  • 1¼ cup lukewarm water

  • 1 packet active dry yeast

  • 1 tsp sugar

  • 3 cups all-purpose flour 5-6 tbsp extra for kneading

  • 1½ tbsp extra-virgin olive oil

  • 2 tbsp plain yellow cornmeal

  • 2 tsp salt

INSTRUCTIONS

  1. In a bowl, combine the lukewarm water, yeast, & sugar. Cover and set aside for 5-10 minutes until foamy.

  2. Meanwhile, in the stand mixer’s bowl, mix 2 cups of the flour with 1 tablespoon of oil, cornmeal, salt, & yeast liquid for 2 minutes at medium speed.

  3. Then, add another cup of flour and continue mixing till the dough comes together into a soft & sticky consistency.

  4. Transfer the dough on a flour-dusted board. Knead for 5-6 minutes and roll it into a ball.

  5. Place the dough ball in an oil-greased large bowl. Rub some oil on the dough ball as well. Then, cover the bowl and keep it aside to rise for 60-75 minutes.

  6. Baking Pizza in Dutch Oven on a Campfire

  7. Start the fire and let the charcoals get red hot. Occasionally move the coals so that all of them are hot and ready.

  8. Coat the bottom & sides of a 7-quart camping Dutch oven with olive oil.

  9. After the pizza dough doubles up in size, place it on a flour-dusted board and roll it out into a 12-inches circular shape. Wrap the rolled out dough in the rolling pin and place it on the oil-greased cold Dutch oven.

  10. Spread a thick layer of pizza sauce on the dough base. Then, arrange the toppings and sprinkle garlic powder, salt & pepper.

  11. Now, place the Dutch oven on the red hot coals. Cover with the lid and put some hot coals on the lid. Bake for 10-15 minutes till the pizza dough is baked perfectly.

  12. Next, carefully remove the lid, sprinkle the shredded cheddar & mozzarella cheese evenly on top, and cover with the lid again. Bake for a few minutes until the cheese melts.

  13. Finally, remove the lid and take off the camping Dutch oven from the hot coals.

  14. Serve the Dutch oven pizza sprinkled with Italian oregano spice blend & chilli flakes.


NOTES

Tips - To cook the Dutch oven pizza in an electric oven, do the following. Line the Dutch oven with parchment paper, lay the pizza base, layer with pizza sauce, topping, spice powders, & shredded cheese. Then, bake in a preheated oven for 15-20 minutes at 450° F.
