Apple Pie: Baked in Dutch Oven

INGREDIENTS

  • For the Pie Crust

  • 1 cup all-purpose flour

  • ½ tsp salt

  • 1 tbsp granulated sugar

  • ½ cup cold butter cut into cubes

  • 4-5 tbsp ice-cold water

  • For the Pie Filling

  • 4 apples peeled, cored, & sliced into ¼-inches thick pieces

  • 1 tsp ground cinnamon or nutmeg

  • ½ cup granulated brown sugar

  • 2 tbsp cornstarch

  • 1 egg beaten

INSTRUCTIONS

  1. Firstly, heat the charcoals in a chimney starter. Also, line the Dutch oven (10-inches/4-quart) with two circular parchment sheets.

  2. Prepare the dough-

  3. - In a bowl, mix the flour, salt, & sugar.

  4. - Add the cold butter cubes and combine them into a crumbly dough.

  5. - Add the ice-cold water (1 tbsp at a time) and continue to combine into a moist non-sticky dough.

  6. - Shape the dough into a ball, place it in a bowl, cover, and refrigerate for an hour.

  7. Prepare the filling in a large bowl. Coat the apple slices with ground cinnamon, brown sugar, & cornstarch uniformly and keep aside.

  8. Ready the Apple Pie-

  9. - Take out 2/3 portion of the dough from the fridge and place it on a flour-dusted board.

  10. - Warm the cold dough in your palms and then roll it out into a 12-inches circular shape. Place it on the lined Dutch oven to form the bottom crust. (Ensure that the 2-inches extra rolled-out dough sticks to the sides of the Dutch oven to make a hollow space to hold the filling.)

  11. - Put the apple filling (using a spoon/ladle) on the hollow space of the bottom crust and spread it out evenly.

  12. - Then, remove the remaining 1/3 dough from the fridge, and roll it out into a 10-inches circular shape. Place it on top of the apple filling.

  13. - Damp the edges of the pie crust with water and seal the edges to secure the apple filling inside.

  14. - Brush the beaten egg all over the top of the pie. Then, make 3-4 cuts (using a knife) on the raw top crust to let steam escape.

  15. Bake the Pie-

  16. - Arrange 1/3 of the hot coal on the ground and place the Dutch oven on it.

  17. - Balance 2 metal skewers on top of the Dutch oven and put the lid on the skewers.

  18. - Arrange 2/3 of the hot coals on the lid, primarily covering the outside rim instead of the center area.

  19. - Cook for an hour while rotating the Dutch oven and the lid at regular intervals.

  20. - Remove the Dutch oven from the heat. Once cool enough to handle, take out the golden apple pie from the Dutch oven and place it on a dish.

  21. - Cut into 7-8 slices and serve.


NOTES

Tips - To bake the apple pie in an electric oven, preheat oven at 425˚F and bake for 1 hour. For first 15 minute cooking time, bake at 425˚ F. Then, reduce to 350˚ F and bake for 45 minutes. • For sweet & tart apple flavor, you may use Golden Delicious, Granny Smith, or Pink Lady. If you prefer sweet apples, then opt for Jonagold or Honeycrisp. Those seeking crisp apples that hold their shape without getting mushy should pick Braeburn.
