Grilled BBQ Chicken Foil Packets

EQUIPMENT

  • Dutch Oven

INGREDIENTS

  • 4 chicken breasts 4 oz each (boneless & skinless)

  • 15-16 green beans ends trimmed, & cut into 2-3 pieces

  • 2 carrots peel and slice Large carrots

  • 1/2 head Brocolli and cauliflower cut both into florets

  • 2 bell peppers red, green, or yellow, deseeded & diced

  • 1 onion peeled, quartered, & layers separated

  • 2 tbsp olive oil

  • Salt & pepper as per taste

  • ½ cup barbeque sauce or any sauce of choice

  • 2 tbsp honey

  • 1 tbsp lemon juice

  • ½ tsp smoked paprika for extra heat, optional

  • 4 tbsp cilantro freshly chopped

  • 4 heavy-duty foil sheets

INSTRUCTIONS

  1. Set the grill for preheating at medium-high heat.

  2. Lay the 4 foil sheets (each sheet being 18*12 inches) on an even surface. Place a chicken breast on the center of each foil sheet.

  3. Divide the green beans, carrots, broccoli, cauliflower, diced bell peppers, & onion pieces into 4 equal parts and arrange them around the chicken. Drizzle the olive oil and sprinkle salt & pepper on top.

  4. Prepare the sauce in a bowl by mixing the barbeque sauce, honey, lemon juice, & smoked paprika.

  5. Brush the sauce generously on both sides of chicken breasts and keep the leftover sauce aside for later. Sprinkle ½ tbsp chopped cilantro on top of each chicken.

  6. Fold the edges of the foil sheets over the chicken & veggies. Seal securely ensuring they don’t open up during grilling.

  7. Place the foil packets on the preheated grill rack cautiously. Grill for 10-12 minutes on each side.

  8. Finally, remove from the grill and let them sit for 2-3 minutes before opening. Serve them by brushing the chicken with the leftover sauce and fresh cilantro garnish.

  9. To Cook the Grilled BBQ Chicken Packets in the Oven:

  10. Place the prepared foil packets on a baking sheet. Bake at 400° F for 20-25 minutes on a preheated oven.

  11. After baking, partially open the top of the foil packets, and broil for 3-4 minutes.


NOTES

Be sure to mix and match Veggie. I use what I have on hand, great way to use up odds and ends from a weekend of camping.
