Grilled Chicken Fajita: Foil Pack Dinner

EQUIPMENT

  • Dutch Oven

INGREDIENTS

  • 4 chicken breasts 4 oz each, skinless, boneless, & cut into thin strips

  • 1 onion peeled & sliced

  • 2 bell peppers deseeded & sliced

  • 4 tbsp olive oil

  • Fajita Seasoning Mix 1 tbsp paprika, 1 tsp cayenne pepper, 1 tsp cornstarch, 1 tsp sugar, ½ tsp onion powder, ½ tsp salt, ¼ tsp garlic powder, ¼ tsp cumin powder, ¼ tsp black pepper

  • 4 heavy-duty aluminum foil sheets or 8 sheets of regular foil, 2 sheets per fajita packet

  • For serving-

  • 4 flour tortillas

  • Sour cream or Greek yogurt

  • Guacamole

  • Salsa

  • Fresh cilantro

INSTRUCTIONS

  1. To Cook on the Grill

  2. Ready the grill by preheating it on medium-high heat.

  3. Arrange the heavy-duty foil sheets in a single layer side by side.

  4. Transfer the chicken strips into a large mixing bowl followed by the sliced onions & bell peppers. Drizzle the olive, fajita seasoning mix, and toss well to coat evenly.

  5. Place ¼ of the prepared chicken fajita in the center of each foil sheet. Fold each sheet neatly over the chicken mixture and seal the edges tightly by pinching.

  6. Put all 4 chicken fajita packets on the hot grill rack cautiously. Grill each side for 6-7 minutes on medium-high heat or until the chicken is cooked.

  7. To Cook in a Campfire

  8. Prepare the fajita packets similarly as above and place them in the campfire’s hot coals directly. Cook for 15-20 minutes.

  9. To Cook in the Oven

  10. Lay the prepared chicken fajita foil packets on a baking tray. Put it in a preheated oven and bake for 15-20 minutes.

  11. To Serve

  12. Put ¼ of the grilled chicken fajita on each tortilla. Top with sour cream, guacamole, & salsa. Wrap it up and enjoy immediately!
